Chocolate candy decorations really dress-up all birthday cakes or dessert. Decorations are usually created using Merckens chocolate candy, but may be made with just any melted, as well, determined by the recipe and size.
Before filling a shape with chocolate candy, it's cavities might have a thin application of contrasting chocolate or tinted white chocolate "painted" on using a small watercolor brush. When unmolded, it looks as though you painted the chocolate on top. For example, when making a bunny mold, paint the carrot with white chocolate candy colored orange or dyed Merckens Chocolate candy melts. Let the look get hard before filling the mold. After that pour the contrasting chocolate to pack within the shape's cavity. When the chocolate candy is set and unmolded, these have an attractive "painted" design on top.
Paint chocolates after they are unmolded. There are Candy Writers, great for decorating with dyed chocolate candy. Don't heavily paint the shape's designs with colored chocolate all of sudden or that part will lose its gleen once unmolded. Paint one layer of coloring at a time. Following each application, chill the shape several seconds until the candy is firm, repeating for each extra color. Fill the mold to top with chocolate candy, tap, chill until hard and unmold. Various kinds of candies can be found at stores that sell candy making supplies.

For extremely small details like vines, mouths and messages, you may pipe melted chocolate candy, icing, etc. onto molded candies using a parchment bag using a little hole cut within the tip. Soften the candy separately prior to placing in parchment bags, then spoon it into bags. Using scissors, cut a tiny opening in tip and squeeze chocolate on molded chocolate. You may also reheat candy if it hardens in the bag by placing the bag back while in the microwave. Simply squeeze from the bag onto your molded candy.
Shavings: Select the small grater holes of your box grater. Holding it over the iced cake, get a large piece of chocolate and grate. Work rapidly since your fingers are tepid and will make a mess. Try not to touch the shavings for a similar reason. It might be best to press the shavings on top of when the icing is soft so that the shavings will adhere.

Transfer Sheets: Transfer beautiful edible decorations on plastic film (acetate) to facilitate transfer onto your melted chocolate! Melt chocolate candy and place over the transfer sheet. Either score to size you need prior to it sets. When set, remove pieces and adhere to "cold chocolate" using a little warm chocolate.

There are many little tricks to follow when handling chocolate: You may work on the marble slab since it is generally cold, that helps the chocolate to set. You may also work on a granite or stainless steel tabletop. Work in the cool space for the reason that chocolate will easily soften when working in a warm one. Avoid touching the chocolate with your fingertips, because they're the warmest part of your hands and can simply soften it. Keep in mind while using any equipment and dipping apparatus, they need to be moisture free; this will become important if using a paint brush -- it must remain air dried at least 48 hours following washing before using once more.
