Cutlery is spoons, forks and knives. We will be speaking strictly about knives, the differences, and what makes a good food preparation knife. I will teach you how to safely use and care for you knives.

Most people, when they hear the word cutlery, it automatically means knives. This is not true. It means forks, spoons, and knives. How many different knifes are there? I have a list for you: Steak knives, butter knives, butcher knives, paring knives and several more. There is a knife for every cutting job in the kitchen. One example of that would be a boning knife, which is used to cut the meat away from the bone.

There are several differences in knives, depending on what they are used for. Let's take a paring knife, they have a very short blade, and a smaller shaft for gripping. They are short because you are usually peeling with a paring knife. The butter knife has a dull, straight blade, it is for spreading food. Each blade is different and unique to the job it does. Now take a look at the steak knife, it has a jagged blade to cut through a steak. The blade works perfectly for steak, where it would be difficult to use to spread food, or peeling fruit.

What makes a good food prep knife, that's strictly up to you. If you start with a small budget for a knife, going to a department store and shopping in their kitchen section, you can find so really nice knifes to use. There are also high end kitchen stores that carry the more expensive knives. The handle, or the grip of the knife is important as well. Using the knife for the job it was made to do is critical.

The main thing to remember while using knives of any size is safety. Using the proper grip, and using the proper cutting board. Sharpening a knife before you use it makes the job go a little faster. Be careful how you handle a knife, by all means don't pick it up by the blade. Just be ever mindful of the placement of hands before you start slicing.

Knowing how to care for your knives, will help them last a lifetime. Some ways to care for your knives is to wash and dry them after use. It's important the dry them completely as to avoid rust. Secondly, is storing them properly. The first way of doing this are wrapping the knives and storing them in a drawer.

You can also store them in a knife block. These are wooden blocks with places for each blade to slide down into the blocks. The last way is to use the proper cutting boards. A hard plastic or if you prefer, a wooden cutting board will keep the blade sharper. The other types of cutting boards will most likely dull your knives very quickly.

You now have the facts about what cutlery is, and in general knives. It is imperative that you know which knife to use with food preparation. Safety and care of your knives is a skill which everyone who cooks should know. Your knives will stay in good condition for many years just by taking proper care of them.
